Chef Louie


Just imagine the fear struck into Chef Louie's heart as he opens his front door around 9am on Thankgiving morning, and sees about 20 or so relatives whom all decided to show up "a little early'.  No problem, especially when you learn a few of these great and easy Brunch dishes, only from the Good Day Crew!

Easy Stuffed Crepes
Here's an elegant treat that no one has to know how simple it is to whip these up!

Need:
2 cups of all purpose flour
5 eggs
1 cup whole milk
pinch of salt
1/2 stick of melted butter
optional:
2 tbs of vanilla
      or
2 tbs of either grated lemon zest or orange

Mix together well so you have a rather soupy mixture, then, onto a medium high well greased griddle, pour 1/4 cup of mix per crepe.  If you use a pan, lift the pan and move in a circular motion so to make the crepe round and thin.After about 2 minutes it should be ready to turn over for a quick finish.

Filling:
I love using blueberry pie filling right from the can, and mixing it with even amounts of sour creme (please, not the low or no fat kind),  Make some filling from this, and, if you like, make a batch with strawberry or any other fruit filling you may like.

Now take the crepe and spoon about 2 to 3 tbs of the filling onto the crepe, then roll it into the traditional log shape. Pile the finished crepes onto a serving dish, shake some powdered sugar over the top, maybe some chopped mint, and instead of maple syrup you may want to drizzle honey over the entire dich and - do yourself a favor, when you put this dish out,  STAND BACK!!!!


Scratch Pancakes:
With my special pancake/waffle mix, easy additions  make these breakfast treats a personalized winner.

Mix:
     All-purpose flour - 6 cups
     Sugar - 2 tablespoons
     Baking powder - 3 teaspoons
     Baking soda - 1∏ teaspoons
     Kosher salt - 1 tablespoon
Keep this mix in a jar with a good lid and you now have the start of the best 'cakes anywhere for about 1/3 the cost of te store bought kind!

Now, for every 2 cups of mix, add 2 eggs, 4 tbs of either melted butter or vegetable oil, a good squirt of vanilla, and 2 cups of buttermilk, whole milk or any of the reduced milks.  Go ahead and melt some butter in a pan and let's make pancakes!  For the more adventurous ones, however, a plain cake just won't do. For you, here is the skinny on some great 'cakes.

Try some iof that squeezable jelly in a circular pattern over the raw side of the cake before you flip it.
Chocolate chips, nuts, and even broken candy cane pieces are great on a 'cake!
Try folding in some cool whip in the mix before it goes on the gridle-ultra light and good!


Chef Louie's Old Standby - The Kitchen Sink!


In this dish, just about everything and anything does real well! I start with a large mixing bowl to which I put leftover ham pieces, bacon pieces and any leftover sausage as well.  I then dump a bag of frozen O'brian potatoes in, at least 2 cups of shreaded cheddar, a dozen eggs well beaten, and anything else in the name of leftover veggies. Pop this into a pre heated 350 oven for about 30 minutes and hand out the dishes and spoons.
