Pat McCoy - How Food Companies are Making More Nutritious Foods To Help Schools Meet New Nutrition Standards

Pat McCoy is the Vice President of Sales with Schwan's Foodservice.

Schwan's Food Service, Inc., the largest provider of pizza to K-12 schools in the United States and one of the country's top five school foodservice companies, announced today that it is introducing a new line of products that meet the stringent HealthierUS School Challenge (HUSSC) guidelines, as well as the USDA's newly proposed school meal guidelines. To meet these guidelines, each serving of the new products must have less than 35 percent of total calories from fat, less than 10 percent of calories from saturated fat, and 0 grams of trans fat. Entr�e items must have less than 600 milligrams of sodium and be at least 51 percent whole grain. More than 72 million school lunches are served every day in schools across the country. Schwan's Food Service provides products to approximately 72,000 of the more than 96,000 public and private schools in the U.S. "Our new pizza products set a new standard for school lunch pizza, confirming that all pizza is not created equal," said Jim Clough, president of Schwan's Food Service. "Great taste," he continued, "can be synonymous with great nutrition as we redefine school lunch pizza."

Fred Dryer

Fred Dryer was born on 6th July, 1946 in Hawthorne, California, USA. He is an American Actor and former Football defensive end in the National Football League (NFL).

Dryer played 13 years in the NFL, playing 176 games, starting 166, and recording 104 career sacks with the New York Giants and Los Angeles Rams.

After his retirement from football, Dryer had a successful career as a film and television actor, notably starring in the 1980's television crime drama series "Hunter."

Dryer also starred in the action-thriller movie "Death before Dishonor" as well as Mike Land in the TV series "Land's End."

Sara Baer-Sinnott - The African Heritage Diet Pyramid

Sara has been an instrumental figure at Oldways since its early days, joining the staff in 1992 to work on one of the first overseas Symposiums (Food, Culture and Discovery in Spain) and the first Mediterranean Diet Conference.
Sara assumed the presidency of Oldways in May 2010, on the untimely death of founder K. Dun Gifford. She now develops company strategy, oversees all Oldways projects and programs, and works closely with all members of the Oldways staff. In her years at Oldways, Sara has been an integral part of Oldways' growth and success. She has helped develop ground-breaking programs including its Traditional Diet Pyramids; the Whole Grains Council; Healthy Pasta Meals; African Heritage and Health; High Five Children's Cooking Curriculum; Oldways Traditional Table; and many others. Her current priorities include the growth of the Mediterranean Foods Alliance, as well as overseaing Symposiums and Culinarias about traditional foods and culture. Sara is also co-author of the much-lauded The Oldways Table with Oldways' Founder Dun Gifford.
Before joining Oldways, Sara was the Special Projects Editor at Inc. Magazine, and she's also worked for state and federal government agencies. She has a B.A. in Economics from Hobart and William Smith Colleges, and an M.A. in Regional Planinng from the University of Massachusetts at Amherst.
Sara's interest in food and nutrition came later in life, as a mother and through her work and travels at Oldways. Her children, now adults, benefitted from an "Oldways education" and from Sara's travels to many parts of Italy, Spain, Greece, France, Turkey, North Africa, China, Australia, Thailand, Iceland and many Oldways destinations in between. Sara and her children have learned to bring the delicious (and easy) cooking of the "old ways" into their own kitchens, and are grateful for the many wonderful tastes and experiences they've had in the last two decades.

Marlene Stauffer graduated from Penn State with a Food Science Degree. She has been with Blommer Chocolate Company since 1982. She is presently the Director of Quality Assurance/ Regulatory Compliance. She is involved with all aspects from Manufacturing, to Quality Systems, to Product Development, to Technical Assistance for customers. She has taught at several NCA and PMCA classes, spoke at PMCA, BCMA and AACT.

Marlene is a member of the PMCA Research Committee, Membership and Education Committee, Institute of Food Technologists, American Association of Candy Technologists, the NCA Chocolate and Regulatory and Health and Nutrition Committee, Pa Food Industry Advisory Board, and Food Industry Group.
