1 cup sugar 1 cup water 1/4 of a medium melon
Pour water and sugar into a sauce pan, and cook together for about 3 minutes to make a simple syrup. Once combined, cool, then refrigerate for a 1/2 hour. Once the syrup is chilled, take about 1/4 of a medium melon, cube it and put into a food pro and puree well. A seedless melon would be best, however, if you only have a seeded one, discard the seeds before pureeing. I like to take a glass dish and pour the simple syrup and the pureed melon into this and pop into the freezer. About every 20 minutes, scrape the edges of the pan and mix the freezing concoction well to make sure it doesn't get too hard to eat. Take out of the freezer about 15 minutes before serving, and enjoy!
