Chef Louie's Pasta Rabe Salad
This is such a nutritionally supercharged meal that just feels like summer! Pasta gives you the carbs you need to feel satisfied, yet, as a complex carb, it isn't broken down as easily as a simple carb, and, you can get pasta in whole wheat or multi grain, giving you that much needed fiber in your diet. For this salad, I have added Broccoli Rabe. Not only is Rabe, (sometimes referred to as Rappini), delicious, but it is loaded with Phytochemicals that are known to fight free radicals in your bloodstream, lowering your rick for certain cancers.
