I have to tell you something, I'm a cheap date! And with the economic times we are in now, more and more are joining my ranks. It just frosts me to watch the decadence of some of the TV chefs touting the benefits of the most expensive cuts of meats on the planets. Believe me, I have taken some of those great cuts, and turned them into something that would have been better off worn on my feet! What ever happened to GOOD? Today's world tell us we need the best cut of meat, the best seat in the house; the next thing you know, we will be believing we need the best of who knows what! Good is the key, take GOOD, and elevate it to GREAT! It's more fun, more satisfying, and, more cheaper, uh, is that a word? Well, you know what I mean.
Something else I what to share with you. I started in the food and prep business years ago in a family restaurant. As I married and with children on the way, I left the industry, only to come back some 25 years later. Up in years and already and "old dog," culinary school was not in the cards, so into the mix I went, learning on the job, studying every style and ethnic flavor I could, eventually leading me to the Corporate Executive Chef position where I could experiment my fat, little heart away. But to me, the real kitchen magic makers, the "go to" Chefs, are the Moms and Dads who, on the strictest of budgets, seemed to feed us, no, nourish us, and all our friends, and without the modern equipment and tools at our disposal today! Some of the biggest dinners, holidays or not, were all cooked on a 4 burner, one oven stove! Imagine, no over/under wall ovens, no 48 inch cook tops, no microwaves or convection ovens, and no 600 horsepower mixers!
Yeah, you guys are my heroes, my idea of what a chef is, and I promise to bring some of that adventure, some of that "no fear" in the kitchen back into the American psyche. My pledge to you all is to empower you in the kitchen, empower you in the supermarket, and, in turn, you will take back the power of an out of control food budget and eat better, entertain better, and keep more of that hard earned money close to home!
